This 5 Minute Avocado Herb Sauce is like a green ketchup. It’s a quick and easy sauce that’s so delicious you’ll want to put it on everything.

I’ve been making variations of avocado sauce for years.  Now I’ve come up with a simple version that has only 6 ingredients.  You probably have most of them in your refrigerator already.  Plus is super easy to make.

It’s loaded with avocados, garlic, olive oil, salt, and parsley. But you can customize it with whatever herbs available.  Usually, I make it with parsley since I always have it on hand.  I’ve also made it with basil for a summery taste, cilantro which makes it like guacamole or dill giving it a fresh floral flavor.

It might be my favorite sauce ever! It can be used as a dressing, marinade, dip or spread. It’s compatible with everything; salads, burgers, chicken, chips and crackers, dipping vegetables, you name it.  I especially love it as a dip for sweet potato fries.

The easiest way to make it is in a food processor. A blender also works but I find it hard to get every last drop out of the blender.

If you use a blender, here’s a TIP:  Make it when you’re having salad.  First, scrape as much as possible out of the blender with a rubber spatula.  Then throw a few lettuce leaves into the blender and use them to mop up the rest of the sauce around the blades.  

If you don’t mind doing a lot of mashing and chopping, you can make it by hand.  Be sure to chop the garlic and herbs very fine and keep mashing the avocado until it’s smooth.

This sauce is all green, all plants, vegan, raw and paleo. It’s a pure food that makes you feel good.

This dressing has the bacteria and virus-fighting power of garlic. Choose any herbs you like. Parsley supports healthy kidney function and is anti-inflammatory. Cilantro helps detoxify heavy metals. Basil helps combat pathogens.

Use Avacado Herb Sauce with Mediterranean Turkey Burgers or on top of grilled chicken or fish.  I love it made with dill as a sauce for salmon.  It’s perfect for quesadillas, burritos or enchiladas.   Top off your Buddha Bowl with it or use it as a dip for steamed veggies.  Or simply use it as a salad dressing.

It stays for about 5 days in the refrigerator.  Once you make it you’ll probably come up with lots of ways to use it.  Then you’ll be making it every week, like I do.

Description

A delicious green sauce that’s easy, healthy, versatile and delicious.


Ingredients

Scale
  • ½ cup avocado, packed, about 1 medium avocado
  • 1 small garlic clove, chopped
  • 3 tablespoons fresh lemon or lime juice
  • 2 tablespoons extra virgin olive oil
  • ½ cup parsley, cilantro, dill or basil, coarsely chopped
  • ½ teaspoon Celtic sea salt
  • 46 tablespoons water or more for desired consistency

Instructions

  1. Put all ingredients in a blender or food processor starting with 4 tablespoons water.
  2. Blend until smooth, add more water to get desired consistency.
  3. Taste to adjust salt.
  4. Store in a jar in the fridge. Keeps for about 5 days.
