Matcha Chia PuddingEnjoy this healthy pudding for breakfast or dessert especially on St. Patricks Day.

It is made with Matcha green tea, culinary grade powder which has been show to be beneficial for your liver.  Matcha Green Tea is a fine powdered form of shade grown green tea leaves. This means you consume the entire leaf and your body can benefit from all of its nutritional properties.

If you’re looking for premium grade matcha I really like Wild Harvested Evergreen Matcha Green Tea Powder.  It has a great taste and since it’s wild powerful nutrients.

The chia is high in fiber, protein, Omega 3’s and calcium.  Chia pudding is one of the best ways to get fiber into your diet BUT if you are not accustomed to much fiber start out with a small portion.  If you eat too much fiber before your body is able to process it you may get constipated.

There is a little caffeine in the matcha but it will be absorbed slowly with all the fiber in the chia.

There are only 5 ingredients in this pudding.  Nut milk (hemp or almond), vanilla, sweetener (stevia, maple syrup or honey), matcha and chia seeds.  I love hemp milk because it’s easy to make and high in protein. Click for recipe.

Matcha Pud Ingredients

Start by blending together the hemp or almond milk, matcha powder, stevia or maple syrup and vanilla.  Pour into a bowl.  I pour it back into the same 4 cup measuring cup I use to measure the nut milk.  Add chia and stir with a fork or whisk.  The mixture will be very thin.

Let sit for 15 minutes stirring every 5 minutes as the chia begins to absorb the liquid.  If you don’t keep stirring every 5 minutes the chia gets clumpy, you don’t want that to happen.

Let it sit for 1 hour or refrigerate overnight.  It will thicken into a pudding like consistency. I like to make it in the evening to have ready for breakfast the next morning.

Store in a glass jar or enjoy with a few berries on top.

Stir again when ready to serve. I like my chia pudding thick but if you want it thinner add in a little more nut milk to get your desired consistency.

Instructions

  1. Blend the nut milk with the maple syrup, vanilla and matcha
  2. Put the chia seeds in a medium bowl, large enough to hold all the liquid.
  3. Pour the blended mixture over the chia seeds. Stir.
  4. Let sit for 15 minutes stirring every five minutes until the chia begins to absorb the liquid.
  5. Let the mixture sit at least 1 hour at room temperature or overnight in the refrigerator, covered.
  6. Stir before serving.
  7. Top with berries.

Notes

Nutrition information is with homemade almond milk and maple syrup.

There is no cooking, the chia pudding need to sit for at least 1 hour to thicken.
