Today I want to talk about chia pudding.  I have made many chia pudding combinations, strawberry, chocolate, hazelnut.  Today’s chia pudding is topped with fresh peach puree.  I just came back from the farmers market with luscious peaches.  I love the fragrance of fresh peaches oooh!  If you like yogurt with fruit on top you are going to love this dish. It is a perfect dish for breakfast, snack or dessert.  If you have never had chia  pudding you are in for a treat with today’s recipe.

Chia seeds absorb liquid and are soothing to your digestive system.  They are high in omega-3 fatty acids which has been show to benefit your heart and reduce inflammation.  In addition they contain calcium and are a good source of protein.  The fiber they provide removes waste from your body and they are a great aid for constipation.

Chia seeds can help with weight loss. The combination of protein, fiber and the gelling quality of chia seeds make you feel full so you eat less. Chia seeds help regulate blood sugar by regulating insulin. Chia seeds are used by athletes to keep their cells hydrated.

Chia pudding is easy to make. When chia seeds soak in nut milk they turn it into a creamy pudding. The seeds plump up and have a nice little crunch.  I like my chia pudding a on the thicker side.  The recipe below is a thick, rich and creamy but if you like it thinner add a little  more almond milk.  Play around to get the texture you like most.

Chia pudding can be made with any type of nut milk you like, almond, hemp and coconut are my favorites.  The basic recipe is 6 Tb of chia soaked in 2 cups of nut milk.  Add maple syrup, stevia or honey and flavoring, vanilla and cinnamon are nice.  Soak at least 1 hour, stirring every few minutes for the first 15 minutes.  Top with fruits or nuts.

Instructions

  1. Put chia seeds, almond milk, vanilla, cinnamon and sweetener into a bowl.  Stir thoroughly. Stir again every few minutes for the next 15 minutes. Then let sit at least 1 hour or overnight in the refrigerator
  2. Don’t worry it will be very thin at the beginning but will thicken into a pudding like consistency.
  3. When the chia is ready, put peaches into a blender and gently blend with sweetener until you get a puree. Don’t over blend, even a few chunks are nice.
  4. Stir the chia pudding, taste for sweetness.
  5. Pour the chia pudding into 2 glass bowls.
  6. Spoon peaches over the chia pudding.
  7. The chia pudding and peach puree can be stored separately for a few days.
