I picked this Kale from my garden today, it was so tender and delicious. I hope you enjoy the recipe.
Raw Tuscan Kale & Avocado Salad
Gluten Free, Raw, Paleo, Vegan PRINT RECIPE
Serves 2-4
4 cups kale, stems removed, very thinly sliced
¼ cup lemon juice
1/2 tsp mustard
½ tsp Celtic sea salt
¼ tsp red pepper flakes
½ c extra virgin olive oil (cold pressed is best)
1 avocado cut into medium cubes
2 Tb pine nuts (optional)
- Take a few leaves of kale, stack and roll them into a small log.
- With a very sharp knife slice the Kale into very thin slices, as thin as you can cut it.
- Mix lemon juice, mustard, olive oil, salt and red pepper flakes.
- Toss with the Kale.
- Add avocado and mix gently.
- Top with pine nuts. Serve.
