Creamy Raw Tomato Soup

I love soups and in the summer a cold soup is so much more appealing than a hot soup.  I like to have a soup made up in the refrigerator so if I need a quick snack, there it is.  When I have delicious, satisfying healthy food readily available I don’t need reach for the cheese or chips.

This soup is divine when the tomatoes are in season. Right now there are lots of cherry and grape tomatoes in the farmers market which are perfect for this recipe.

 

Creamy Raw Tomato Soup

Gluten Free, Dairy Free, Paleo, Vegan, Nut Free

4 servings

2 pints cherry or plum tomatoes
4 sun–dried tomatoes, soaked in warm water until soft
1 stalk celery chopped
2 Tb minced red onion
1 small clove garlic chopped
1 Tb lemon juice
2 Tb cold pressed olive oil
¼  tsp cayenne
1 Tb fresh thyme coarsely chopped
1 Tb fresh oregano coarsely chopped
20 basil leaves chopped (save 3 leaves to cut into thin ribbons as a garnish)
Celtic Sea salt
1 Tb extra virgin olive oil, cold pressed for garnish

  • Coarsely chop the tomatoes
  • Blend half the tomatoes with the sun dried tomatoes, celery, red onion, garlic, lemon juice, 2 Tb olive oil and cayenne.
  • Add the chopped tomatoes, thyme, oregano and basil.
  • Taste, add salt if necessary.
  • Pour into bowls, drizzle with olive oil and garnish with basil ribbons.
