Overnight Oatmeal In A Jar

By June 20, 2013May 7th, 2015Breakfast, Gluten Free, Meal Planning, Raw

Prepare this at night and have breakfast waiting for you when you wake up! Great in the summer too when you don’t feel like eating something warm.  I use gluten free oats because I am sensitive to gluten.  I save my gluten eating for something fabulous like fresh sourdough bread dipped in olive oil.  Steel cut oats will work fine.

Overnight Oatmeal In a Jar

Gluten Free, Dairy Free, Vegan,

1-2 servings

1/2 cup gluten free oats, or steel cut oats
1 cup almond or hemp milk
1 Tb unsweetened shredded coconut
1 Tb chia seeds
1 Tb chopped nuts (I used walnuts)
¼ cup blueberries
1 Tb maple syrup (optional) or stevia.  The berries make it sweet enough for me.
¼ tsp vanilla extract
¼ tsp cinnamon

  • Combine everything in a glass jar with a lid. Stir and close the lid.
  • Store in the fridge overnight.
  • Remove from the refrigerator and eat as is or heat it up for a minute.
  • Top with extra blueberries and cinnamon

 A few more things…

  •  Use strawberries or cherries instead of the blueberries.
  •  Instead of berries add in 2 Tb of goji berries, dates or dried cranberries
  • Make it with 1/2 almond milk and 1/2 coconut yogurt, it comes out really creamy!
