Amazing High Protein Sweet Potato Pudding

This creamy smooth sweet potato pudding is my favorite breakfast right now.  It requires only 5 ingredients and is super easy to make.  When you start your day with sufficient protein and fat your brain and body feel safe.  Your body relaxes because there’s fuel but you don’t get the sugar spike. Paleo with a vegan option.

Sweet Potato PuddingIt has an amazing creamy, rich, smooth texture like the best soft dessert you ever ate. The good news is there’s no cream or dairy. There’s also no sweetener. It’s made with sweet potatoes, coconut milk, almond butter and cinnamon. My favorite kind of recipe.Sweet Potato PuddingThe protein in this pudding comes from collagen. Have you ever used it?  Collagen protein is one of the new hot things in the world of healthy eating.

Collagen is the most abundant protein found in your body.   Most people like it because it keeps their skin smooth and prevents wrinkles.  I find it makes my skin firmer and nails stronger.  Yes, maybe a little fountain of youth.

I’ve also been using it to support my digestive system. It “seals and heals” the protective lining of the gastrointestinal tract. Great for healing leaky gut.

It’s also fantastic for your joints and tendons.  It’s like a “glue” that keeps your joints and tendons together.

Unfortunately, daily living tends to slow down the natural production of collagen.  It’s a  good idea to eat collagen rich foods regularly to replenish your body.

The food with the most amount of collagen is bone broth, which I love, but I don’t always feel like eating for breakfast.  Recently a few companies have come out with an easy to use collage powder with all the beneficial properties. I like it because it doesn’t have any taste and dissolves nicely in hot or cold food. I include it in this recipe.

Collagen isn’t a vegan product.  If you are vegan use your favorite vegan protein powder or hemp seeds in the recipe instead.  You won’t get the benefits of collagen but you’ll get the good protein.  If you use vanilla protein powder you’ll get a nice vanilla flavor.

Are Sweet Potatoes Good For You?

Sweet potatoes are full of nutrients and antioxidants. They’re also high in fiber, especially if you get organic and leave the skins on.  They’ve got lots of C and B vitamins. The orange color from the carotenoids provides Vitamin A and enhances the function of your immune system.

The other ingredients in this recipe are good for your body too!

Cinnamon helps regulate your blood sugar. The coconut milk supplies your body with healthy fat.  Almond butter adds good protein and fat too.

How To Make Sweet Potato Pudding

Cut your sweet potatoes into chunks. Use organic sweet potatoes if possible. They’re sweeter and you can leave the skin on for more nutrients and fiber. If not organic peel them

Steam the sweet potatoes until tender, 8-10 minutes.

Once they’re soft put them in the blender with the coconut milk, almond butter, cinnamon and collagen. Serve immediately.  Your pudding with be warm and creamy.

Store whatever is left in the refrigerator and enjoy it cold the next day, that’s really good too.

Description

Sweet Potato Pudding with 14 grams of collagen protein, good for your joints and muscles, digestive system and makes your skin, nails, and hair great. What could be better?


Ingredients

Scale

Optional Toppings

  • walnuts
  • pumpkin seeds
  • chia seeds
  • shredded coconut

Instructions

  1. Cut sweet potato into chunks (peel if not organic). Steam until soft, about 8 minutes. Alternately use already cooked sweet potatoes, warmed if desired.
  2. Put sweet potatoes, almond butter, coconut milk, cinnamon and collagen or hemp protein into the blender.
  3. Blend until smooth. Add additional coconut nut milk if you want it thinner.
  4. Spoon into a bowl. Sprinkle with toppings if desired.
  5. Serve warm or cold.
  6. Store in the refrigerator for up to 2 days. To reheat put into a pot and heat on low until warm.
