This creamy cauliflower tastes just like mashed potatoes but is oh-so-much healthier. It’s incredibly easy to make in a food processor. For an extra treat serve it with golden garlic.

Cauliflower is in season now with big blooming heads available in the farmers market.

This is one vegetable that deserves to be included in your diet.  It has  an impressive array of nutrients, including vitamins, minerals, antioxidants, and other phytochemicals. Read about all cauliflower’s health benefits here.  

Cauliflower is a vegetable that is not heavily sprayed so non-organic is a fine choice if organic is not easily available.

When steamed and pureed cauliflower turns silky and velvety just like mashed potatoes. Adding grass fed butter helps too! Last weeks post on butter explains how great butter is.

If you don’t like butter, ghee or olive work well too.

How To Make

Steam the cauliflower until very tender about 10 minutes. Don’t boil it. Boiling it makes it too soggy. Drain.

Add the cauliflower to a food processor along with 2 Tb of butter, ghee or olive oil and salt.

Puree until smooth and creamy.  Taste, add more butter or salt if desired.

Serve immediately or store in the refrigerator for up to 1 day. It’s best the first day. Reheat in a covered pan.

Tips for Making Cauliflower Mashed ‘Potatoes’

  • Cut off as much of the stem as possible. The florets are sweeter.
  • Don’t boil or let the cauliflower touch the water when steaming. Water makes it soggy.
  • Cook until soft but not mushy.
  • Process immediately to melt the butter.

I like to serve it with Mushroom Chicken. The mushroom gravy on top of the cauliflower mash is amazing.

It great served with golden garlic too!

How to Make Golden Garlic

While cauliflower is steaming, cook the garlic.

In a small sauté pan, heat 1 tablespoons of butter over very low heat and add the chopped garlic. Cook on low until golden, stirring frequently about 5 minutes. Sprinkle with salt.

Serve the cauliflower mashed potatoes sprinkled with the golden garlic and fresh pepper.

Description

Creamy cauliflower is an easy recipe that tastes like mashed potatoes.


Ingredients

Scale
  • 1 head cauliflower, cut into florets (about 8 cups)
  • 3 tablespoons grass fed cultured butter, ghee or extra virgin olive oil
  • Celtic sea salt to taste

Golden Garlic

  • 4 cloves garlic, coarsely chopped
  • Celtic sea salt
  • Fresh ground pepper

Instructions

  1. Steam the cauliflower until very tender about 10 minutes. Don’t boil it. Boiling it makes it too soggy. Drain.
  2. Add the cauliflower to a food processor along with 2 tablespoons of butter and salt. (If you don’t eat butter, use 2 tablespoons of ghee or extra virgin olive oil).
  3. Process until smooth and creamy, scraping down the sides with a rubber spatula.
  4. Taste, add more salt and butter if desired.
  5. Serve immediately or top with golden garlic

Golden Garlic

  1. While cauliflower is steaming, cook the garlic.
  2. In a small sauté pan, heat 1 tablespoons of butter over very low heat and add the chopped garlic.
  3. Cook on low until golden, stirring frequently about 5 minutes. Sprinkle with a pinch of salt.
  4. Serve cauliflower sprinkled with the golden garlic and fresh pepper.

Notes

The cauliflower mashed ‘potatoes’ taste great without the garlic topping too!
