Easy Cranberry Sauce

This easy cranberry sauce is healthier and tastier than store bought. It’s has a luscious chunky texture, delicious tangy flavor and is sweetened with maple syrup.

Ingredients

  • 4 cups fresh cranberries (12 ounces) (organic if possible)
  • 3/4 cup fresh orange juice
  • 1/23/4 cup pure maple syrup
  • 1 cinnamon stick or 1/4 teaspoon ground
  • 6 cardamom seeds or pods or 1/4 teaspoon ground
  • 1 Tablespoon orange zest, from 1 orange (organic if possible)

Instructions

  1. Rinse the cranberries.
  2. In a saucepan mix orange juice, 1/2 cup maple syrup, cinnamon stick and cardamom. Heat on medium-high until it just begins to boil
  3. Add cranberries and bring to a boil. Reduce to a simmer and cook uncovered until most of the cranberries have burst and the sauce thickens, 10-15 minutes.
  4. Turn the heat off and add orange zest. Taste for sweetness, add more if desired. 
  5. Fish out the  cinnamon, and discard. If using cardamom pods discard those too. You don’t have to find the cardamom seeds they’re small.
  6. Let sit for 30 minutes to thicken and serve. 
  7. Sauce can be served warm after sitting for 30 minutes without chilling.
  8. If making in advance, transfer to a storing or serving dish and place it in the fridge to chill. Sauce will continue to thicken as it cools.
  9. Cover and store in the refrigerator for up 5 days.
  10. Heat up or serve cold.
