This recipe gave everyone great pleasure this year. Zucchini brownies with a rich dark chocolate, fudgy taste, what could be better? Made with lots of zucchini (but you won’t taste it) and sweetened with maple syrup, coconut sugar and chocolate chips. YUM! The BEST zucchini brownies ever, actually the best brownie ever! Also gluten-free, dairy free and nut free.

Kitchari is a traditional Ayurvedic recipe that heals your body. It’s gentle on digestion, made with mung dal, basmati rice and warming spices. This is a one pan meal with lots of vegetables that’s tasty, comforting and nourishing. Make it ahead of time and enjoy it any time of the day.

Easy Pan Fried Balsamic Tofu

Do you like tofu? Even if you think you don’t you’ll love this incredibly tasty recipe. It’s a sweet and savory dish made with tofu, simmered in a balsamic marinade with red peppers. Not only is it delicious, it’s easy to make in only 20 minutes. This is a healthy, vegan, tofu dish everyone loves. I’ve made this dish so many times this year for lunch and dinner. I love it.

Alkaline Green Smoothie

This healthy, rich and creamy Alkaline Green Smoothie is a great way to start your day. It’s packed full of hydrating green vegetables with just right amount of sweetness. Since it helps reduce the acids that naturally build up in your body overnight, you’ll have more energy, less inflammation and better health. This is my go to smoothie all year long.

Stir Fried Soba Noodles with Vegetables

Everyone loves noodles which is why this recipe is so popular. This is a gluten free Japanese soba noodle dish with vegetables and a tasty sesame soba noodle sauce. You can choose any vegetables that are in season. It’s a nutritious vegan recipe you’ll love eating for lunch or dinner.

Sautéed Chicken and Apples

Sautéed Chicken and Apples is the perfect easy to make one pan dish. Caramelized apples, juicy seared chicken breasts and savory kale are seasoned with turmeric, thyme, and apple cider vinegar, creating a delicious nutritious meal. It’s an easy-to-make, immune boosting, anti-inflammatory recipe. My family loves this dish.

Chocolate Protein Smoothie Bowl

Dessert or breakfast? This creamy thick chocolate smoothie bowl is packed with protein, fruits and vegetables but tastes like a decadent dessert. Enjoy this frozen bowl of deliciousness as a healthy breakfast or snack. It’s quick and easy to make, vegan, paleo and gluten free.

Paleo Chicken Broccoli ‘Rice’ Casserole

This casserole is a great dish to make ahead of time for easy meals. It’s entirely grain free and low carb with plenty of protein and vegetables. It’s packed with flavor and is incredibly satisfying! Even though there is some prep involved, I made it a few times over the holiday season and was so happy to come home to an already made meal.

Butternut Squash Vegetable Soup

This immune boosting butternut squash vegetable soup has a variety of tastes and textures guaranteed to strengthen your body from the inside out. It’s a hearty soup made with creamy butternut squash, antioxidant rich cauliflower rice and nutrient dense kale but completely grain and gluten free. Herbs and spices enhance the flavor of the vegetables and boost your overall health.

Mango Chia Seed Pudding

I love chia pudding for breakfast. This Mango Chia Pudding is made with a coconut-almond chia pudding, beautifully layered with pureed mango. You can use fresh or frozen mangos. It’s light and refreshing but at the same time super satisfying because it’s full of fiber, protein and healthy fats. A great way to start your day. Easy to make with only 6 ingredients.

Moist Paleo Banana Bread (No Sweetener)

OMG I made this so many times this year. It’s one of my go to breakfast breads because I love bread. The best part is there is NO SWEETENER. It tastes so good my grandson Avery comes over for a few slices after school when I make it! The sweetness comes from the bananas. It’s a healthy, gluten free, dairy free bread made with almond flour that you’ll feel good about having for breakfast or snack.

Crispy Smashed Brussels Sprouts

Crispy Smashed Brussels Sprouts are a healthy green vegetable that’s incredibly delicious and easy to prepare. They have nice crispy edges and a tender, sweet center. The Brussels sprouts are boiled and smashed, topped with garlic and parmesan and roasted until golden. Even if you think you don’t like Brussels sprouts, you’ll like these. There is a vegan option too! Lots of people wrote to me saying they made them for Thanksgiving but you can make them all fall and winter.
