Description
An easy, delicious summertime favorite. Only 3 ingredients and 5 minutes to cook on the grill.
Ingredients
Scale
- 2 pounds small-medium zucchini (4-5)
- 2 tablespoons olive oil
- 1/4 teaspoon Celtic sea salt plus more for garnish
- 1 tablespoon aged balsamic vinegar
- Fresh ground black pepper (optional)
Instructions
- Preheat your grill on high.
- Cut off the ends of the zucchini and slice lengthwise into 1/4” slices (see photo). Use a mandoline if you have one, or just a sharp knife.
- Sprinkle with olive oil and ¼ teaspoon salt. Toss to coat.
- Oil the grill. Place each slice on the grill one at a time. You may have to do them in two batches depending on the size of your grill.
- Grill for 3 minutes without disturbing. They should have light grill marks.
- Turn them over using tongs. Cook another 2 minutes.
- Transfer to a plate and spread out, don’t pile them on top of one another.
- Repeat, if necessary, with the second batch.
- Sprinkle with a splash of balsamic vinegar, salt and pepper.
- Serve and enjoy!*
Notes
It’s quite delicious sprinkled with a little goat cheese if that’s part of your diet!
