Description
This bright and flavorful dressing is made with fresh carrots, ginger, rice vinegar lime juice, a bit of coconut sugar and olive oil.
Ingredients

- 2 cups carrots peeled and chopped (about 7 ounces)
- 2 Tablespoons peeled and roughly chopped fresh ginger
- ⅓ cup rice vinegar
- 2 tablespoons lime juice
- 3 Tablespoons gluten free tamari
- 1 tablespoon coconut sugar or maple syrup (leave out for Whole30)
- ¼ teaspoon sea salt
- 3/4 cup extra-virgin olive oil
Instructions

- Add all the ingredients, and half the olive oil to the blender. Blend until the texture is smooth.

- While keeping the blender on, slowly add the rest of the oil so that it emulsifies (blends) with the other ingredients. This helps keep the dressing from separating.

- Taste to adjust salt and sweet if necessary.
- Serve or store in the refrigerator for up to 1 week.
