Carrot Ginger Dressing

Description

This bright and flavorful dressing is made with fresh carrots, ginger, rice vinegar lime juice, a bit of coconut sugar and olive oil. 


Ingredients

Scale
  • 2 cups carrots peeled and chopped (about 7 ounces)
  • 2 Tablespoons peeled and roughly chopped fresh ginger
  • ⅓ cup rice vinegar
  • 2 tablespoons lime juice
  • 3 Tablespoons gluten free tamari
  • 1 tablespoon coconut sugar or maple syrup (leave out for Whole30)
  • ¼ teaspoon sea salt
  • 3/4 cup extra-virgin olive oil

Instructions

    1. Add all the ingredients, and half the olive oil to the blender. Blend until the texture is smooth.

    1. While keeping the blender on, slowly add the rest of the oil so that it emulsifies (blends) with the other ingredients. This helps keep the dressing from separating. 

    1. Taste to adjust salt and sweet if necessary.
    2. Serve or store in the refrigerator for up to 1 week.
