Description
Frozen Cottage Cheese Bark is a sweet and creamy high protein treat. This recipe is made with chocolate and almonds. It’s incredibly healthy and easy to make.

- 4 Tablespoons chocolate chips, melted
- 2 Tablespoons chopped tamari almonds or roasted almonds
- 2 cups whole milk cottage cheese, I use Good Culture
- 2–3 Tablespoons maple syrup or honey
- 2 Tablespoons almond butter
- 1/4 teaspoon almond extract
- 1/2 teaspoon vanilla extract
Instructions
- Melt chocolate chips in a double boiler, stir until smooth. Let sit on top of the water in the double boiler to keep warm. Coarsely chop the almonds.
- Blend cottage with almond butter, maple syrup, vanilla and almond extract in a food processor or high-speed blender, until smooth. Scrape down the sides as needed. Don’t over blend or it will get too thin.
- Pour cottage cheese mixture onto a parchment lined baking sheet and form into a rectangle shape, using your spatula, about 1/4 inch thick.
- Drop teaspoon size dollops of the melted chocolate onto the cottage cheese about 1 1/2 inches apart. You should get about 12. Use a fork to swirl the chocolate around.
- Sprinkle the chopped almonds on top.
- Freeze for 2-3 hours until firm. Remove from the freezer and cut or break into pieces.
- Serve immediately. Store remainder in an airtight container or freezer bag.
- When frozen, let sit at room temperature for 1-2 minutes for best texture.
- Don’t let the cottage cheese bars sit out of the freezer for more than 3-4 minutes they will begin to melt.
