Description

Frozen Cottage Cheese Bark is a sweet and creamy high protein treat. This recipe is made with chocolate and almonds. It’s incredibly healthy and easy to make.

Instructions

  1. Melt chocolate chips in a double boiler, stir until smooth. Let sit on top of the water in the double boiler to keep warm. Coarsely chop the almonds.
  2. Blend cottage with almond butter, maple syrup, vanilla and almond extract in a food processor or high-speed blender, until smooth. Scrape down the sides as needed. Don’t over blend or it will get too thin.
  3. Pour cottage cheese mixture onto a parchment lined baking sheet and form into a rectangle shape, using your spatula, about 1/4 inch thick.
  4. Drop teaspoon size dollops of the melted chocolate onto the cottage cheese about 1 1/2 inches apart. You should get about 12. Use a fork to swirl the chocolate around.
  5. Sprinkle the chopped almonds on top.
  6. Freeze for 2-3 hours until firm. Remove from the freezer and cut or break into pieces.
  7. Serve immediately. Store remainder in an airtight container or freezer bag.
  8. When frozen, let sit at room temperature for 1-2 minutes for best texture.
  9. Don’t let the cottage cheese bars sit out of the freezer for more than 3-4 minutes they will begin to melt.
