Description
This Gut Healing Blueberry Smoothie is a delicious, nutritious way to start your day. The blueberries are combined with coconut yogurt, celery, cucumbers and apples. It will make you feel amazing.
Ingredients

- ½ cup coconut yogurt
- ½ cup cucumber chopped, peeled if not organic
- 1 stalk organic celery, sliced
- 1/2 organic Granny Smith apple, unpeeled and chopped
- 1/4 small avocado, chopped
- 1–2 large Medjool dates, pitted and softened if necessary
- 1 tablespoon hemp hearts or collagen
- 1 cup frozen wild blueberries
- ½ teaspoon organic vanilla extract
- ⅔ cup coconut milk, or nut milk of choice, or oat milk*
Instructions
- Add all ingredients to a high-powered blender in the order listed above
- Blend until smooth, adding more milk to thin, if necessary.
- Pour into a glass and enjoy!
- You can double the recipe to serve 2.
Notes
I use drinking coconut milk, like Pacific Foods Organic Unsweetened Coconut Milk.
Canned coconut milk can be used if you want more purity but it’s quite rich.
