Description

This Gut Healing Blueberry Smoothie is a delicious, nutritious way to start your day. The blueberries are combined with coconut yogurt, celery, cucumbers and apples. It will make you feel amazing.


Ingredients

Scale
  • ½ cup coconut yogurt
  • ½ cup cucumber chopped, peeled if not organic
  • 1 stalk organic celery, sliced
  • 1/2 organic Granny Smith apple, unpeeled and chopped
  • 1/4 small avocado, chopped
  • 12 large Medjool dates, pitted and softened if necessary
  • 1 tablespoon hemp hearts or collagen
  • 1 cup frozen wild blueberries
  • ½ teaspoon organic vanilla extract
  • ⅔ cup coconut milk, or nut milk of choice, or oat milk*

Instructions

  1. Add all ingredients to a high-powered blender in the order listed above
  2. Blend until smooth, adding more milk to thin, if necessary.
  3. Pour into a glass and enjoy!
  4. You can double the recipe to serve 2.

 

Equipment

Notes

I use drinking coconut milk, like Pacific Foods Organic Unsweetened Coconut Milk. 
Canned coconut milk can be used if you want more purity but it’s quite rich.
