Healthy apple muffins that are soft, moist, and filled with cozy fall flavor — a nutritious treat that brings pure pleasure in every bite.

Ingredients

  • 1 cup blanched almond flour, 112 grams
  • 1/4 cup coconut flour, 30 grams
  • 1/3 cup tapioca flour, 40 grams
  • 2 teaspoons cinnamon
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking soda
  • 4 eggs (room temperature)
  • 1/4 cup almond milk unsweetened, or other milk
  • 1/2 cup coconut sugar, 90 grams
  • 3 Tablespoons olive oil or coconut oil, 42 grams
  • 1 1/2 teaspoons vanilla extract
  • 1 Tablespoon fresh lemon juice
  • 1 cup apple peeled and grated on the big holes of a box grater
  • 1 cup apple diced into ¼” cubes
  • 2 Tablespoons coconut sugar for sprinkling on top (optional)
  • ¼ cup walnuts or pecans chopped (optional)

Instructions

  1. Heat the oven to 375 degrees. Line a 12 cup muffin tin with muffin liners or generously grease.
  2. In a medium bowl, combine almond flour, coconut flour, tapioca flour, cinnamon, sea salt and baking soda.
  3. In a separate bowl, whisk together eggs, almond milk, coconut sugar, olive oil, vanilla and lemon juice until well combined.
  4. Grate the apple and measure. Put into a clean kitchen towel and squeeze out most of the moisture. Add to the dry ingredients.
  5. Chop the apples, measure and add to the dry ingredients.
  6. Mix the grated and chopped apples with dry ingredients until they are covered with flour.
  7. Pour the wet ingredients into the dry and mix until just combined and no flour is visible.
  8. Divide the batter evenly between the 12 muffin cups.
  9. Sprinkle the tops of the muffins with coconut sugar and chopped walnuts, if using.
  10. Bake in preheated oven 15-20 mins or until muffins rise and are slightly puffed and toothpick inserted into center of one muffin comes out clean.  
  11. Try to allow to cool for a 30 minutes on a wire rack before serving.  Enjoy!
