Herb Roasted Jerusalem Artichokes

A savory oven roasted vegetable, rich in prebiotics to feed the good bacteria in your gut.

Ingredients

  • ½ pound Jerusalem Artichokes (Sunchokes), scrubbed
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon Celtic sea salt
  • fresh ground black pepper
  • 1 tablespoon fresh sage or rosemary, chopped or 1 teaspoon dried
  • 2 teaspoons fresh oregano chopped

Instructions

  1. Preheat oven to 450 degrees
  2. Scrub the Jerusalem artichokes and chop into 1 inch bite-size chunks
  3. Toss in a medium sized bowl with olive oil, salt, pepper and sage or rosemary until coated
  4. Place onto a rimmed baking sheet and bake for 20-25 minutes, turning once, until the skin is slightly browned
  5. Sprinkle with fresh oregano
  6. Serve warm
