Sweet Potato Pudding with 14 grams of collagen protein, good for your joints and muscles, digestive system and makes your skin, nails, and hair great. What could be better?
Ingredients

- 2 cups organic sweet potato, cut into chunks
- ½ cup coconut milk
- 1 tablespoon creamy unsweetened almond butter
- 1 teaspoon cinnamon or pumpkin pie spice
- 2 scoops collagen (for vegan use hemp protein powder)
Optional Toppings
- walnuts
- pumpkin seeds
- chia seeds
- shredded coconut
Instructions
- Cut sweet potato into chunks (peel if not organic). Steam until soft, about 8 minutes. Alternately use already cooked sweet potatoes, warmed if desired.
- Put sweet potatoes, almond butter, coconut milk, cinnamon and collagen or hemp protein into the blender.
- Blend until smooth. Add additional coconut nut milk if you want it thinner.
- Spoon into a bowl. Sprinkle with toppings if desired.
- Serve warm or cold.
- Store in the refrigerator for up to 2 days. To reheat put into a pot and heat on low until warm.
