2 cups fresh tomatoes, cut into large chunks, or 2 cups cherry tomatoes cut in half
¼ cup pitted kalamata olives, chopped
1 cup baby spinach, coarsely chopped
8-10 basil leaves, torn or chopped
Lemon wedges for serving

Instructions
In a small bowl mix together the spices.
Put the peeled shrimp into a bowl, add half the spices and mix to coat evenly. Let sit in the refrigerator while you prepare the other ingredients. Have everything ready before you begin to cook.
Heat 1 1/2 Tablespoons olive oil on medium high heat. Add the seasoned shrimp in a single layer. Cook for about 1 to 2 minutes per side until they turn pink and opaque. Immediately remove the shrimp to a clean plate.
In the same pan (leaving those tasty, flavorful juices behind), add remaining 1 1/2 tablespoons of olive oil. Add zucchini and peppers. Sprinkle with sea salt. Sauté on medium low until lightly brown and almost tender, turning frequently, 5-8 minutes.
Add garlic and remaining spices, stir for 20 seconds until fragrant.
Add tomatoes and olives. Sauté 2 minutes until the tomatoes begin to soften, stir occasionally to cook evenly.
Add spinach, stir until the spinach is wilted, 30 seconds.
Return the shrimp and any accumulated juices to the skillet. Toss gently for 30 seconds to warm through.
Remove from heat. Season with salt and pepper to taste. Finish with fresh basil, a squeeze of lemon juice, and a sprinkle of aleppo pepper (if using), then serve immediately.
