Instructions

  1. Freeze the base of the ice cream maker for at least 12 hours, preferably overnight.
  2. Put the coconut milk, coconut cream, maple syrup, vanilla and salt into a blender. Blend on low for 20-30 seconds until combined. (If your coconut milk has any chunks make sure they are all dissolved).
  3. Pour the mixture into the ice cream maker and churn. It will begin to thicken after about 20 minutes.
  4. Keep churning until you get a soft serve consistency. It usually takes about 40 minutes in total.
  5. Scoop out and enjoy for soft serve, or if  you want a firm ice cream, transfer to a large freezer-safe container, use a spoon to smooth the top.
  6. Cover securely and freeze for 2-4 hours or until firm. Set out for 5-20 minutes before serving to soften.
  7. Serve alone or with toppings. 

Notes

The recipe can be made with just coconut milk if you want less fat. Coconut cream tends to yield creamier results due to the higher fat content. 

Native Forest Simple Organic Coconut Milk is good and doesn’t have any guar but it will be a little less creamy.
