Description

A delicious fruit dessert with good protein from the almonds and walnuts.


Ingredients

Scale
  • 1 cup walnuts, coarsely chopped
  • 1 ¼ cups almond flour
  • 5 tablespoons organic grass fed cultured butter or coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 7 cups pears, peeled, cored and sliced
  • 1 ½ cups fresh or frozen raspberries (defrosted if frozen))
  • 1/2 cup maple syrup
  • 2 tablespoons arrowroot

Instructions

  1. Preheat oven to 375 degrees.
  2. Melt butter or coconut oil gently and add vanilla. Set aside to cool.
  3. In a medium bowl, mix walnuts with flour.
  4. In a separate bowl, mix maple syrup and arrowroot, until there are no more lumps.
  5. Pour melted butter over the flour and mix with your hands until all the butter is absorbed by the flour. It should be crumbly.
  6. Pour the maple syrup over the fruit. Mix gently so sweetener is evenly distributed.
  7. Put into a 2 quart baking dish.
  8. Spread almond flour/walnut mixture evenly over the fruit.
  9. Bake on the top half of the oven for 45 minutes or until walnuts are lightly brown and the filling is bubbling around the edges.
