These healthy Strawberry Crumble Bars are fruity, crumbly, lightly sweet, and satisfying. They have a juicy strawberry chia jam filling layered between a crumbly oat and almond crust.

For the Strawberry Chia Filling

  • 1 pound (3 cups) strawberries (fresh or frozen), chopped
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 Tablespoon lemon juice
  • 3 Tablespoons chia seeds

For the Crumble Crust

Instructions

  1. Heat strawberries and maple syrup, in a small saucepan over medium heat. Bring to a simmer, then reduce heat to low and cook for 5-10 minutes, stirring frequently until the strawberries begin to soften. Use a spoon or potato masher to mash the fruit to a jam-like consistency.
  2. Stir in the chia seeds, lemon juice and vanilla until combined.  Set aside to let thicken while you prepare the crust.
  3. Preheat the oven to 350 degrees F. Line a 8×8 inch pan with parchment paper.
  4. In a food processor, add the oats, almond flour, coconut sugar. Process until the oats are broken down with just a few flakes remaining. If you want it crunchier, process less so there are bigger oat flakes.
  5. Add butter and pulse until it is well combined and forms a dough like consistency.
  6. Reserve 3/4 cup of the mixture for the topping and set aside. Use your hands to evenly press the remaining dough into the bottom of the pan.
  7. Bake the crust for 10 minutes, remove from the oven.
  8. Pour strawberry jam filling over the crust and use a spoon to spread over the top.
  9. Sprinkle the top with reserved dough.
  10. Bake for 40-45 minutes or until the edges and top is lightly brown.
  11. Allow bars to cool completely before cutting removing from the pan or cutting, otherwise they will fall apart. To speed up this process you can transfer to the fridge.
  12. Slice into squares and enjoy!
