Mascarpone Vanilla Chia Layer

  • 1 cup non-dairy milk, almond milk (unsweetened), light coconut milk, cashew milk
  • 4 Tablespoons chia seeds
  • 3 Tablespoons maple syrup
  • 1 teaspoon vanilla
  • Pinch of sea salt
  • 2 Tablespoons vegan yogurt or whipped coconut cream for a creamier layer (optional)

Chocolate Coffee Chia Layer

Instructions

  • Mascarpone Chia Layer: Put the non-dairy milk into a bowl. Sprinkle with chia seeds and mix. Add the maple syrup, vanilla and salt. Mix again. Continue to mix every 5 minutes for 15 minutes. Let sit for at least 1 hour or preferably overnight in the refrigerator .
  • Chocolate Coffee Chia Layer: Put the non-dairy milk into a bowl. Sprinkle with chia seeds and mix Add the vanilla, cacao, coffee, maple syrup and mix again. Continue to mix every 5 minutes for 15 minutes.  Let sit for at least 1 hour or preferably overnight in the refrigerator.
  • When ready to layer the tiramisu into servings, mix 2 Tablespoons of yogurt or coconut whipped cream into the ‘mascarpone chia’. This is optional but makes it creamier.
  • Layering The Tiramisu: Using 4 glasses or bowls, spoon a layer of mascarpone chia into each. Top with a layer of chocolate chia and then continue to layer using two layers of chocolate chia and mascarpone chia on top. Sprinkle with cacao powder.
  • Serve or cover and store in the refrigerator. See above for storage tips.
