  1. Put all the ingredients except the cacao nibs into a food processor.
  2. Pulse together until a thick dough forms.
  3. Transfer to a bowl and mix in ¼ cup of the cacao nibs until they are evenly combined.
  4. Roll into 10 balls.
  5. Place the remaining ¼ cup of cacao nibs on board or plate. Roll each ball into the nibs so they are lightly coated.
  6. Store energy bites in refrigerator or freezer
  7. They keep for 3 weeks in the refrigerator 2 months in the freezer.
