- 1/3 cup creamy or smooth almond butter, raw if possible
- ½ cup hemp hearts
- 1/2 cup unsweetened shredded coconut
- 2 tablespoons raw honey
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup cacao nibs
Instructions
- Put all the ingredients except the cacao nibs into a food processor.
- Pulse together until a thick dough forms.
- Transfer to a bowl and mix in ¼ cup of the cacao nibs until they are evenly combined.
- Roll into 10 balls.
- Place the remaining ¼ cup of cacao nibs on board or plate. Roll each ball into the nibs so they are lightly coated.
- Store energy bites in refrigerator or freezer
- They keep for 3 weeks in the refrigerator 2 months in the freezer.
