Convenient little healthy energy bites that you can take anywhere. They taste so good you’ll think they are made with real cookie dough but they are a high protein snack with healthy ingredients. Yum!
As a child I loved eating cookie dough right from the bowl. The sweet creaminess of sugar and butter was fantastic. Being in the kitchen with my mother, measuring flour and creating the batter with the electric mixer gave me a feeling of warmth and safety. It is a fond memory that brings tears to my eyes when I think about it now.
My adult, health-oriented self doesn’t want to indulge in the sugar-laden cookie dough anymore. But because I am a kid at heart and my memory of cookie dough is so soothing, I decided to create these Cookie Dough Energy Bites with Cacao Nibs. They’re an incredibly delicious, healthy snack packed with good-for-you ingredients. While they are not the same as the cookie dough I made with my mother they’re a worthy replacement. These plant based, raw cookie dough bites are perfect for every kind of diet—raw, paleo, vegan and gluten-free.
They have 4 main ingredients: almond butter, hemp hearts, shredded coconut and cacao nibs. These ingredients are full of protein, fat and fiber which are digested and absorbed slowly keeping your blood sugar stable.
These little cookie dough energy bites are high in protein from the almond butter and hemp seeds. Each one contains 6.8 grams of protein.
Cacao nibs are pure cacao beans that have been roasted, separated from their husks and broken into smaller pieces. They are even better for us than dark chocolate. Cacao nibs provide vital nutrients and reduce stress by stimulating the brain to release neurotransmitters that make us feel really good.
The coconut oil is a great belly fat burning food. It goes straight to the liver from the gut where it can be used as a quick energy source. It increases our metabolism.
These energy-boosting cookie dough bites are a great way to maintain your energy throughout the day. Take them with you for post work out, pack in kids school lunches, eat for breakfast or enjoy as an afternoon pick me up.
Start by placing the almond butter, hemp hearts, coconut, honey, coconut oil and vanilla into a food processor. Pulse until a thick dough forms.
Transfer to a bowl and mix in ¼ cup of the cacao nibs until they are evenly combined.
Roll into 10 balls.
Place the remaining ¼ cup of cacao nibs on board or plate. Roll each ball into the nibs so they are lightly coated. The cacao nibs on the outside give them a nice crunch.
Store in the refrigerator for 3 weeks or for 2 months in the freezer.

Ingredients
- 1/3 cup creamy or smooth almond butter, raw if possible
- ½ cup hemp hearts
- 1/2 cup unsweetened shredded coconut
- 2 tablespoons raw honey
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup cacao nibs
Instructions
- Put all the ingredients except the cacao nibs into a food processor.
- Pulse together until a thick dough forms.
- Transfer to a bowl and mix in ¼ cup of the cacao nibs until they are evenly combined.
- Roll into 10 balls.
- Place the remaining ¼ cup of cacao nibs on board or plate. Roll each ball into the nibs so they are lightly coated.
- Store energy bites in refrigerator or freezer
- They keep for 3 weeks in the refrigerator 2 months in the freezer.

These are delicious and so easy to put together. I used tahini due to an allergy and maple syrup because I’m vegan. I also only used a bit over a TBSP. They were plenty sweet for me. Thank you for such an easy, tasty and nutritious recipe.
