These Fresh Strawberry Energy Bites are delicious, energy boosting little gems with only 7 ingredients.  They’re paleo, gluten-free and vegan. A great snack to take with you on a hike or enjoy as dessert.

Now that summer is here the strawberries are bursting with flavor. They are sweet, tart and juicy with an abundance of nutrients that make you feel fantastic. The smell of fresh strawberries always makes me smile.

Strawberries are high in antioxidants which help detoxify your body and reduce inflammation.

The seeds of these bright red fruits contain the omega-3 fatty acid alpha-linolenic acid, which has been proven to improve mood. They’re a relatively low glycemic fruit with lots of
vitamin C.

In this recipe I use fresh strawberries to make a quick on-the-go snack with cashews, walnuts and dates.  What makes them special is they’re bursting with fresh strawberry flavor.

Ingredients

These little bites have  7 ingredients and take only 5 minutes to make.

You absolutely need a food processor for this recipe.  This is a good one at a fair price. (affiliate link)

The sweetness comes from the strawberries and dates. In Ayurveda dates are considered a ‘superfood’ because they are both Sattvic (promote peace in the mind) and directly nourish Ojas (the essence of our immune system). They are considered a nutritive tonic for the body, energizing for the tissues and immune system.

Cashew and walnuts give them crunch as well as protein and health fats. I also add  a little coconut flour to bind them together.

The fresh and organic freeze dried strawberries give them a rich strawberry taste.  The freeze dried strawberries are available in most health foods stores.

The energy bites can be made with just the fresh strawberries but they won’t have as much strawberry flavor.

How to Make Strawberry Energy Bites

If using freeze-dried strawberries process them first until broken into small pieces. Remove half to use as a coating for the bites.

Add nuts, dates, vanilla and coconut flour. Process only until the nuts are broken up into tiny pieces and the mixture forms a paste.  Don’t over process. They taste best when there is still a little texture.

Add strawberries. Process until dispersed throughout mixture, stopping to scrape down the sides as needed.

Use your hands to form them into balls.  You can make them as big or small as you want.   I like to make bite size balls about 1″ in diameter.  This will give you about 20 little bites. If you want to make them bigger you’ll get 10-12 out of the batch.

I like to give them a nice coating.  It makes them pretty and adds flavor. Choose ground up freeze dried strawberries for extra strawberry flavor or shredded coconut for a little more coconut taste.

Let them chill for about 1 hour to firm up a bit.

Once they are chilled roll them in your coating of choice or eat them plain.

Snack bites, breakfast bites, dessert bites – with these gems anything is possible.  They’re naturally sweet with just the right amount of crunch.  Summer snacking couldn’t be better.

Fresh Strawberry Energy Bites are naturally sweet with just the right amount of crunch.  A perfect on-the-go snack for summer!

Instructions

  1. Put the 2/3 cup of the freeze dried strawberries into a food processor and process until a they are broken into tiny pieces.  Remove half of them and set aside to roll the bites in later, if desired.
  2. Combine the dates, cashews, walnuts, coconut flour and vanilla in a food processor until you get a coarse crumble and the nuts are broken up into tiny pieces (but not fully ground). The mixture will form a coarse paste-like consistency.
  3. Add strawberries. Process until dispersed throughout mixture, stopping to scrape down the sides as needed.
  4. Using your hands roll the dough into approximately 20 1″ balls (or any size you want).
  5. Place them on a plate and roll them into either additional dried strawberries* or shredded coconut.and put into the refrigerator for 1 hour to firm up.
  6. After 1 hour, take the bites out of the fridge and enjoy.
  7. Store in an airtight container in the refrigerator for up to 7 days or freeze for up to a month.

Notes

Freeze dried strawberries give these bites a rich strawberry taste, but they can be made with just the fresh strawberries if unavailable. Skip step 1 if not using dried strawberries.
