Ingredients

Scale

Immunity Spice Mix

  • 3 tablespoons turmeric
  • 1 ½ tablespoons ground cumin
  • 1 ½ tablespoons ground coriander
  • 1 ½ tablespoons ground fennel
  • 1½ teaspoons dry ginger
  • 1 teaspoon black pepper
  • 1/8 teaspoon cinnamon
  • 1 ½ teaspoons Celtic sea salt

Grilled Chicken with Immunity Spice Mix

  • 1 ¼ lb chicken (2 breasts)
  • 3 tablespoons coconut oil, melted and divided
  • 11 ½ tablespoons immunity spice mix (I use 1 ½ Tb since I like a lot of spice)

Instructions

Immunity Spice Mix

  1. Mix everything together and store in a glass jar.

Grilled Chicken with Immunity Boosting Spice Mix

  1. Heat a grill on high.
  2. Cut the 2 chicken breasts in half horizontally. You now have 4 pieces.
  3. Spread 1- ½ tablespoons of the immunity spice mix out on a plate.
  4. Rub both sides of the chicken with a little coconut oil and press each side of the chicken onto the spices. Both sides should be lightly covered with the spices.
  5. Put 1 tablespoon coconut oil onto a plate and put 2 of the chicken breasts into the oil to get a light coating on both sides. Repeat with the remaining tablespoon of coconut oil and 2 chicken breasts.
  6. Oil the grill. Place chicken onto the hot grill.
  7. Grill for 3 minutes until lightly browned with nice grill marks
  8. Using tongs, turn the chicken over. Grill on the other side for 2-3 minutes until chicken is cooked through. It will be firm to the touch.
  9. Serve warm or save for later and serve cold, either way it is delicious.

Notes

If you are making up the spice mix the prep will be around 20 minutes depending on how organized your spices are.
