Prepare the potatoes: Wash and dry or peel. Cut into chunks, half moons or fries. (see above)
In a large bowl toss sweet potatoes with olive oil
Sprinkle with salt, pepper and any spices you’re using. Toss again to coat evenly. If using a mixture of spices, mix the spices together in a small bowl first.
Spread sweet potatoes in single layer on a baking sheet, being sure not to overcrowd.
Bake until sweet potatoes are tender and golden brown, turning every 15 minutes so they brown evenly, 30-45 minutes.
