Description

This strawberry smoothie bowl will empower you with lots of nutrients and protein.  The frozen strawberries, cauliflower, avocado will keep you going all morning long.


Ingredients

Scale
  • 3/4 cup nut milk or milk of choice (I make fresh cashew milk, recipe below)
  • 1 cup frozen organic strawberries
  • 1 cup frozen cauliflower florets (blanched or raw see directions above)
  • 1/4 frozen banana or 2 Tablespoons maple syrup
  • 1/4 avocado
  • 2 scoops collagen or hemp protein
  • 1 teaspoon organic vanilla extract
  • 2 Tablespoons chia seeds

Optional Toppings

  • Fresh berries or fruits: strawberries, raspberries, kiwi, banana
  • Shredded coconut
  • Seeds: hemp seeds, pumpkin seeds, sunflower seeds, sesame seeds
  • Nuts: walnuts, almonds, cashews, pecans
  • Freeze dried fruit: Strawberries, raspberries, mango
  • Seed or nut butter: almond butter, cashew butter, peanut butter are all good
  • Cacao nibs add a nice crunch and lots of nutrients
  • Chocolate chips – for fun!


Instructions

  1. In a high speed blender, start with your nut milk*, then add the frozen strawberries, frozen cauliflower, frozen banana, avocado, collagen, vanilla, and chia. If your nut milk is cold,* let everything sit for 2-3 minutes to let the fruit soften slightly.
  2. Start the blender on low and blend until the fruit is chopped up into small bits.

  3. Scrape down the sides. Turn up to high and blend until smooth. Scrape down the sides as needed. Don’t over blend, you want it to be nice and thick with a soft serve consistency.

Notes

I love using cashews, it makes instant nut milk, no straining required. To make cashew milk blend 2 tablespoons cashews with 3/4 cup water for 3 minutes until smooth. For easier digestion soak cashews in boiling water for 15 minutes or overnight in the refrigerator.

Your cashew milk will be warm, that’s okay. No need to wait 2-3 minutes for the frozen fruit to warm up. Blend immediately.
