The Barbie movie inspired me to make this pink Strawberry Smoothie Bowl. Starting your day with delicious, nutritious frozen strawberries, cauliflower and avocado will empower you to feel like Barbie ‘we girls can do anything.’

Greta Gerwig’s Barbie movie is about Barbie’s make-believe journey from Barbie Land to the ‘real world’. The Barbie movie is really fun. Barbie’s position of positivity and female empowerment is inspiring women, young and old. It brilliantly addresses the subject of feminism. It’s a movie that includes gender, race, size, sexuality, and culture. I loved it.

The film shows there is a place for everyone, where everyone is loved and treated with respect, no matter if they are a Barbie or Ken.

Thank you Barbie for inspiring me! I honor you with this thick and creamy Strawberry Smoothie Bowl. It’s bursting with the sweet flavor of ripe strawberries and lots of nutrition. Full of protein, fat and fiber. It’s a terrific way to start your day on a healthy note while enjoying the pleasure of a satisfying treat. 

Hidden Healthy Ingredient

The healthy secret in this smoothie bowl is frozen cauliflower. You may be saying, ‘what is cauliflower doing in a smoothie?’ Don’t worry you won’t even taste it!

Cauliflower is a cruciferous vegetable with many health benefits. It’s rich in fiber, which is essential for a good digestive system. The vitamin C boosts your immunity, and the B vitamins give you energy for good metabolism, healthy cell and brain function.

How to make frozen cauliflower.

It’s best to use frozen cauliflower to get a thick texture like soft serve. Blanching is recommended before freezing. It locks in a vegetable’s nutritional content and makes it more digestible. Here’s how you do it:

  • Cut into florets, removing most of the stem.
  • Bring a pot of water to boil.
  • Add cauliflower, blanch for 3 minutes.
  • Drain in a colander or strainer.
  • Put into a bowl of ice water for 2 minutes. Drain and pat dry.
  • Place into a container or freezer bag. Freeze for up to 2 months.

I usually cut the entire head of cauliflower into florets. Blanch in a large pot. Once cool measure into 1 cup portions and place into freezer bags to have on hand for smoothies.

Ingredients and Substitutions

This is a vegan, gluten free, perfectly sweet, decadently creamy smoothie bowl with lots of nutrients. I make it without any sweetener using only a little banana. There are 8 ingredients and it only takes 5 minutes.

This is what you need:

  • Frozen Organic Strawberries are sweet and delicious. They must be frozen to get the thick, sorbet-like texture. Organic is best. Frozen raspberries or cherries can be substituted.
  • Frozen Cauliflower is packed with nutrients and you can’t taste it. Make at home (see above) or buy already frozen.
  • Avocado makes the smoothie rich and creamy. They contain high levels of healthy beneficial fats, which keep us satisfied. They contain lots of vitamins, minerals and antioxidants.
  • Nut Milk or other non dairy milk is needed to blend the frozen vegetables. I like cashew milk which can be made instantly (recipe included) but any milk will work. For nut free use coconut milk or oat milk.
  • Frozen Banana – I use just a little to sweeten the smoothie but you can leave it out or use a little maple syrup.
  • Vanilla – adds flavor and makes the smoothie taste sweeter.
  • Collagen or vegan protein powder – Protein is the most satiating macronutrient. Protein keeps you full longer, this is partly because protein reduces your level of the hunger hormone ghrelin. Recommended but if you don’t like powders, add 1-2 tablespoons of hemp seeds or nut butter.
  • Chia seeds – a super food, great for your digestive track. High in omega-3 fatty acids and packed with antioxidants, fiber and protein. Contains lots of calcium to improve bone mineral density. Optional but recommended. Flax seeds can be substituted.

How To Make A Creamy Thick Barbie Smoothie Bowl

In a high speed blender, start with your nut milk, then add the frozen strawberries, frozen cauliflower, frozen banana, avocado, collagen, vanilla, and chia. Let everything sit for 2-3 minutes to let the fruit soften slightly.

Start the blender on low and blend until the fruit is chopped up into small bits.

Scrape down the sides. Turn up to high and blend until smooth. Scrape down the sides as needed. You may have to do it a few times. Don’t over blend, you want it to be nice and thick with a soft serve consistency.

If you’re having trouble blending, add a little more milk, one tablespoon at a time. Be careful not to add too much, or the smoothie bowl will be too thin.

Pour into 2 bowls and top with your favorite toppings or enjoy plain.

Optional Toppings

One of the best parts of a smoothie bowl is adding fabulous toppings. This turns a simple smoothie into a satisfying meal. Here are a few choices:

  • Fresh berries or fruits: strawberries, raspberries, kiwi, banana
  • Shredded coconut
  • Seeds: hemp seeds, pumpkin seeds, sunflower seeds, sesame seeds
  • Nuts: walnuts, almonds, cashews, pecans
  • Freeze dried fruit: Strawberries, raspberries, mango
  • Seed or nut butter: almond butter, cashew butter, peanut butter are all good
  • Cacao nibs add a nice crunch and lots of nutrients
  • Chocolate chips – for fun!

Storage

The smoothie is best served right away. It will melt if it sits.

If you want to save some for another day, freeze it! Pour it into a zip lock bag and spread thin. When ready to eat, break into pieces and reblend. It will keep up to 1 month.

Frequently Asked Questions

Can I make this strawberry smoothie bowl in a regular blender?

It comes out best in a high speed blender, to break up the fruit more easily. If using a regular kitchen blender, let the frozen strawberries, cauliflower and banana soften for 3 minutes, use a sharp knife to chop them into small pieces before blending.

Can I make the smoothie bowl without bananas?

Yes absolutely, just leave it out. The smoothie will be a little less sweet but delicious. You could also add 2 tablespoons maple syrup or 2 medjool dates (softened), add before blending.

Can I use fresh strawberries instead of frozen?

Frozen strawberries are best. The organic ones are always available. Fresh strawberries can be used but the consistency will be thinner. You can add a few ice cubes to make it thicker or drink it like a regular smoothie.

Can I use water instead of nut milk?

Water will work fine, the smoothie bowl will be a little less creamy.

Description

This strawberry smoothie bowl will empower you with lots of nutrients and protein.  The frozen strawberries, cauliflower, avocado will keep you going all morning long.


Ingredients

Scale
  • 3/4 cup nut milk or milk of choice (I make fresh cashew milk, recipe below)
  • 1 cup frozen organic strawberries
  • 1 cup frozen cauliflower florets (blanched or raw see directions above)
  • 1/4 frozen banana or 2 Tablespoons maple syrup
  • 1/4 avocado
  • 2 scoops collagen or hemp protein
  • 1 teaspoon organic vanilla extract
  • 2 Tablespoons chia seeds

Optional Toppings

Instructions

  1. In a high speed blender, start with your nut milk*, then add the frozen strawberries, frozen cauliflower, frozen banana, avocado, collagen, vanilla, and chia. If your nut milk is cold,* let everything sit for 2-3 minutes to let the fruit soften slightly.
  2. Start the blender on low and blend until the fruit is chopped up into small bits.

  3. Scrape down the sides. Turn up to high and blend until smooth. Scrape down the sides as needed. Don’t over blend, you want it to be nice and thick with a soft serve consistency.

I love using cashews, it makes instant nut milk, no straining required. To make cashew milk blend 2 tablespoons cashews with 3/4 cup water for 3 minutes until smooth. For easier digestion soak cashews in boiling water for 15 minutes or overnight in the refrigerator.

Your cashew milk will be warm, that’s okay. No need to wait 2-3 minutes for the frozen fruit to warm up. Blend immediately.
