Instructions

  1. Preheat oven to 350 degrees.
  2. Gently melt the coconut oil in a small pan on low, turn off the heat and add vanilla.
  3. In a medium bowl, mix walnuts with almond and coconut flours.
  4. Pour the melted coconut oil over the walnut mixture.
  5. Mix so the flours are evenly coated with the coconut oil. Set aside.
  6. In small bowl mix the maple syrup, coconut sugar and arrowroot. Stir to mix evenly so there are no lumps. Set aside
  7. Mix apples, cranberries, orange juice and orange zest together in a large bowl.
  8. Pour the maple syrup mixture over apple.  Mix gentle to coat the fruit with the sweetener.
  9. Pour the apples into an 8 cup baking dish.
  10. Top with walnut mixture.
  11. Bake for 45-60 minutes or until walnuts are lightly brown and the filling is bubbling on the sides of the pan.
  12. Let cool slightly, serve warm or at room temperature.
  13. Store for 3 days at room temperature

Notes

You can use all maple syrup or all coconut sugar if you prefer.
