This dish is great for a quick delicious breakfast it only takes about 7 minutes. You can use any left over cooked grain. You can also serve it as a quinoa pudding for dessert.
Quinoa Breakfast Porridge
Gluten Free, Dairy Free, Vegan,
Serves 2
1 cup left over quinoa or other grain such as brown rice or millet
2 Tb rolled oats, it makes it creamier (optional) use gluten free oats
1 cup water, almond milk, hemp milk or coconut milk
1 tsp cinnamon
1 Tb sweetener raw honey, maple syrup
½ tsp vanilla
1/8 cup shredded coconut
Bring quinoa, oats, nut milk, and cinnamon to a boil. Add coconut and vanilla. Lower the flame to simmer and cook 5-7 minutes until creamy stirring occasionally. Add sweetener. Serve immediately.
