Overnight Oatmeal In A Jar

Thisย overnight oatmealย made in a jar is a healthy, make-ahead breakfast that’s perfect for busy mornings.

Prepare this at night and have breakfast waiting for you when you wake up! Serve warm in the winter or cool in summer when you don’t feel like eating something warm. ย 

I use gluten free oats because I am sensitive to gluten.ย  I save my gluten eating for something fabulous like fresh sourdough bread dipped in olive oil. ย Steel cut oats will work fine.

I use homemade hemp milk for extra protein. Click here for the recipe. Any diary free milk will work.

Substitutions

  • Use strawberries or cherries instead of the blueberries.
  • ย Instead of berries add inย 2 Tb of goji berries, dates or dried cranberries
  • Make it with 1/2 almond milk and 1/2 coconut yogurt, it comes out really creamy!

Ingredients

Scale
  • 1/2 cup gluten free oats, or steel cut oats
  • 1 cup hemp or almond milk
  • 1 Tablespoon unsweetened shredded coconut
  • 1 Tablespoon chia seeds
  • 1 Tb chopped nuts (I used walnuts)
  • ยผ cup blueberries
  • 1 Tablespon maple syrup (optional)ย or stevia.ย ย The berries make it sweet enough for me.
  • ยผ teaspoon vanilla extract
  • ยผ teaspoon cinnamon

Instructions

  1. Combine everything in a glass jar with a lid. Stir and close the lid.
  2. Store in the fridge overnight.
  3. Remove from the refrigerator and eat as is or heat it up for a minute.
  4. Top with extra blueberries and cinnamon

    this sounds great….just like all your other inspirations….making it right now….also told Kate about it……and you’re right, breakfast is important…I want to shift from just having a piece of toast, because by 10:00 am I am starving……………thanks.
