Cleansing Garden Salad with Easy Miso Dressing

Just 5 minutes is required for this Cleansing Garden Salad. It’s full of garden fresh greens and veggies.  The Easy Miso Dressing has only 6 ingredients and there is no chopping or blending required. It’s perfect when your diet needs a little re-balancing.Sometimes with all the summer activities and parties, I find my body needs a little reset.

Even though all the food I make has healthy ingredients, is gluten free and paleo friendly, I know I’ll be eating richer, sweeter foods than normal over the July 4 holiday weekend coming up.  Since we live at the beach there will be lots of the fun getting together with friends and family. I love it!

I look forward to enjoying great food, wine and desserts.  I love the feeling of love and connection as we sit together on the porch together enjoying dinner and fireworks.

Being able to indulge a little is part of enjoying life for me.  When my body is healthy it’s no problem for me to drink a little wine, eat a little cheese and have a few desserts. I consider it freedom. I don’t think of it as slipping, it’s a choice.  There’s no guilt, only pleasure.

I am preparing in advance to keep my body in balance. I am enjoying this Cleansing Garden Salad for lunch every day this week.  It gives me a chance to do a little detoxing before the party weekend.

I know when we’re busy it’s hard to find time to make a nourishing meal.  This Cleansing Garden Salad is the ultimate quick, healthy meal.  Just toss a bunch of greens and veggies into a bowl, and call it a meal.   It’s energizing and restoring. How great is that!

I use the greens, arugula and radishes from my garden. I add sliced scallions for taste and top it off with avocado and sunflower seeds for healthy fats. That’s it.

You can make the salad with baby greens from the supermarket and add in kale for more variety but it’s not necessary. For veggies use radishes or carrots and scallions or onions, whatever you have on hand.

The Miso Dressing doesn’t require any blending or chopping.  Simply measure the 6 ingredients right into a jar and shake.  The dressing recipe makes enough for 6 salads.  And it stays for 14 days in the refrigerator.

I save a few jars from when I use up my coconut oil for storing sauces. They are the perfect size.  I actually love jars and keep a few of all sizes in my pantry.

Miso provides your gut with beneficial bacteria that helps you stay vibrant and happy. It’s rich in essential minerals and is a good source of various B vitamins.  Miso is a food that makes you feel good.

For more protein in this salad, add beans, chicken, canned wild sardines or wild salmon.

Description

A quick-and-easy salad to re-balance your body. Nutrient rich greens and vegetables with a miso dressing that supports good gut bacteria.


Ingredients

Scale
  • 8 cups mixed greens (baby lettuce, arugula, watercress, kale)
  • 34 radishes, thinly sliced
  • 12 scallions thinly sliced
  • ¼ cup roasted sunflower seeds
  • 1 ripe avocado, thinly sliced

Miso Dressing


Instructions

  1. Add the greens to a large serving bowl and top with scallion, radishes, sunflower seeds.
  2. Make the Easy Miso Dressing.
  3. Add just enough dressing to moisten the salad. Toss gently and top with avocado slices.
  4. Serve extra dressing on the side.
  5. Any left over salad will stay fresh (undressed) up to 3 days in the refrigerator.

Miso Dressing

  1. Measure all ingredients into a jar and shake.
  2. Store in the refrigerator for up to 14 days.

Notes
