Coconut Braised Chicken with Mushrooms and Potatoes

By March 5, 2016October 14th, 2018Chicken & Turkey, Main Dish, Recipes

I was inspired to make this chicken dish from my amazing trip to Sri Lanka.  They love cooking with coconut milk.  This fragrant chicken dish is rich and creamy with lots of flavor from the chilies, cilantro and lime.  I made it with chicken thighs but breasts would also work.   I love it because it is made in one pot.  I used my favorite cast iron pan.  Serve it with a large plate of sautéed kale or spinach to balance the meal.

  10. Add the smoked paprika, stir.
  11. Add the coconut milk, potatoes and chicken to the pan and bring to a simmer.
  12. Cover and bake in the oven for about 1 hour, until the chicken is cooked through and the potatoes are tender.
