In this quick and easy dessert, frozen pineapple and banana blend together into a luscious, creamy treat. You can spoon it in to a bowl like I do with my Strawberry Almond Butter Ice Cream or pipe it into a beautiful soft-serve swirl for a little extra fun.

Ingredients

  • Frozen Pineapple – The star of this soft serve, giving it a naturally sweet, juicy tropical flavor and beautiful golden color. Cut up a fresh ripe pineapple and freeze it or buy already frozen chunks.
  • Frozen Banana – Makes the soft serve naturally creamy without any dairy and adds a touch of sweetness without overpowering the pineapple.
  • Coconut Milk – You only need a little to help everything blend. I like unsweetened full fat coconut milk for the tropical flavor, but almond, cashew or oat milk also can be used.
  • Maple Syrup or Honey (optional) – Depending on the sweetness of your fruit, you may not need it at all. Use maple syrup to keep the recipe vegan.

How to Make Pineapple Soft Serve

Making this frozen treat couldn’t be easier.

Add the frozen banana, pineapple and coconut milk to a food processor or blender. Process until thick, creamy and completely smooth, stopping to scrape down the sides as needed.

Taste and add maple syrup or honey if you want it a little sweeter.

You can spoon it into bowls or glasses and enjoy it right away. If it’s a little too soft, put it in the freezer for about 15 minutes to firm up, then scoop with an ice cream scoop.

Make It Look Like Soft Serve

For that fun, swirled soft-serve look, transfer the mixture to a pastry bag or zip-top freezer bag fitted with a fluted tip. Freeze for 20 minutes to let it firm up nicely.

The easiest way to fill a pastry bag is to place it into a wide-mouthed jar with the tip down to easily hold it in place. Fold the top edges of the bag down over the rim of the jar to keep it open. Fill with the soft serve, unfold and chill.

Pipe it into bowls or glasses using a circular motion to create a beautiful swirl. Serve immediately and enjoy!

Tips for the Creamiest Pineapple Soft Serve

  • Use fully frozen fruit. Both the pineapple and banana should be frozen solid. This gives you that thick, creamy soft-serve texture.
  • Start with less milk. Too much liquid will turn your soft serve into a smoothie. Begin with 1/4 cup and add just a splash more only if needed.
  • Use ripe fruit. A very ripe banana and sweet pineapple provide plenty of natural sweetness. You may not need any sweetener.
  • Don’t overblend. Process just until smooth and creamy. The longer you process, the more the frozen fruit begins to melt.

Fun Variations

Once you have the basic recipe, it’s easy to play around with different flavors.

  • Use other fruit – Instead of pineapple, other frozen fruit works great too. Try mango, cherries, blueberries or strawberries.
  • Pineapple Lime: Add a squeeze of fresh lime juice and a little lime zest for an extra-bright tropical flavor.

How to Store Pineapple Soft Serve

Pineapple soft serve has the creamiest texture when enjoyed immediately.

If you want to make it ahead, you have a few choices. If you’re going to eat it within 3-4 days, pipe it into small bowls and place into the freezer. Once frozen cover with plastic wrap or foil for 3-4 days. Let it sit out for 15 minutes before serving.

If you want to keep it longer, transfer it to your piping bag or ziplock bag and freeze as flat as possible, for up to 3 months. It will become much firmer than traditional soft serve, so let it sit at room temperature for about 10–20 minutes before piping

When you’re ready to serve it again, let the bag thaw on the counter for 20 minutes or so. Knead the bag to help soften the ice cream again, and then it’s ready to pipe.

If you’re not piping it, store in an airtight freezer-safe container for up to 3 months. Let it warm up for 10 minutes before scooping with an ice cream scoop.

  • Alternately, if you want to achieve the soft-serve look transfer to a pastry bag or zip-top plastic freezer bag fitted with a fluted tip.* Let freeze for 20 minutes to firm up. Squeeze the bag into your serving bowls or cups using a swirl motion.
