I love smoothies, and these days I’m really into smoothie bowls.  It’s like eating SOFT SERVE for breakfast.

What is a smoothie bowl? Basically it’s the same thing as a smoothie but thicker, gets poured into a bowl and is served with an assortment of toppings. They offer a very quick, delicious way to get nutrients into our bodies.

This recipe only requires 5 ingredients, 1 blenderand 5 minutes.  Doesn’t that sound great?

Fruit is what makes a smoothie taste sweet and delicious but some fruits tend to raise our blood sugar levels and cause a crash later in the day. I try to avoid high glycemic index fruit such as bananas, pineapple, mangos and fruit juices.

In this smoothie I use low glycemic cherries and apple (pear is good too). They are naturally sweet so no additional sweetener is required.

Cherries are full of antioxidants and provide lymph-moving support.  If you can find them, Earthbound Farms has a frozen blend of sweet and tart cherries.  The tart cherries are even better for you. I always use frozen, it keeps the smoothie nice and cool.

Get organic apples or pears so you can use the skin.  It contains pectin which is a great detoxifier of the gut wall resulting in significant and beneficial changes to your gut microbes.

For fat I add avocado. Adding fat helps you properly absorb certain nutrients and will make the smoothie digest more slowly.  Don’t be afraid of fat, it’s as a good thing.

Adding spinach and celery to the smoothie is a delicious way to fill your body with nutrients and fiber.

Spinach is high in vitamin A which effectively protects our skin and mucous membranes from various kinds of bacteria and viruses. It’s also high in iron, vitamin K, C and magnesium.

Celery is high in electrolytes. Electrolytes are chemicals in water that are essential for bodily functions. They help with hydration, maintaining healthy blood pressure, repairing tissue damage, and making sure your muscles and nerves work correctly.

I add a little vanilla to make the smoothie sweeter without any sweetener.  I use water but almond milk or any nut milk will make it creamier.

The nutrients, fat and amount of  fiber in this smoothie is a tasty way to keep your tummy satisfied through the morning. A perfect way to start your day!

Blend your smoothie, scraping down the sides until you have the consistency of SOFT SERVE! You want it to be thick and cold so don’t over blend. That’s what makes it so delicious.

The best part about smoothie bowls is the toppings. I’ve been keeping it super simple and add a spoonful each of coconut, walnuts and chia seeds for added nutrients, fiber, and protein.

Fruit or banana makes a pretty addition but isn’t necessary since the entire bowl is made of fruit.

Other great toppings are cacao nibs, hemp seeds, goji berries, granola, pretty much anything you can imagine.

I can literally have this smoothie bowl for breakfast and I won’t start to feel hungry for at least 3-4 hours. The combo of protein, healthy fat and fiber gives it major staying power!

This makes the perfect breakfast or snack. It’s especially great for the summer months when we want to eat something nourishing and delicious without spending a lot of time in the kitchen.

TIP: Swirl your smoothie in your mouth before swallowing. This helps the enzyme amylase, found in saliva, to break out the carbohydrates in the food, allowing the best extraction of nutrients. Then rinse your mouth after your smoothie so the fruit sugar and nuts are away from your teeth.

Ingredients

Scale
  • 1 apple or pear cut in chunks, peel if not organic
  • 1 1/2 cups frozen cherries
  • 1/2 cup filtered water or nut milk of choice
  • 1 stalk celery
  • 2 large handfuls spinach (about 3 cups)
  • 1/2 small avocado
  • 1/2 teaspoon vanilla extract (optional)

Optional Toppings


Instructions

  1. Blend all ingredients together until smooth and creamy. You want it to be thick and cold so don’t over blend.
  2. Pour into a bowl, add toppings.
  3. Enjoy immediately.

Notes

Add 2 servings of hemp, collagen, whey or vegan protein powder for additional protein.
