Sautéed Spinach and Radicchio

In this recipe of Sauteed Spinach and Radicchio the bitter radicchio contrasts nicely with the sweet spinach. It can be made in less than 5 minutes!Sauteed Spinach and RadicchioIf you have been reading my newsletter or FB page recently, you know I am in Boulder with my son Trevor and daughter-in-law Anna waiting for their baby to arrive.  The due date was Sunday but no baby yet.  This is quite normal for a first baby, but it is hard to wait, especially for Anna.

I am enjoying cooking for them and especially making lots of vegetables to fill the new mom and baby with vitamins, minerals, fiber, micro and macro nutrients.  They are thrilled to be eating so many vegetables, especially when I cook them.

We start the day with a green smoothie, salad with protein and avocado for lunch and a small amount of clean animal protein along with 2 types of vegetables for dinner.  We eat about 7 cups of vegetables each day.  It cleanses our body and gives us lots of energy.

I understand it can be challenging to make 2 vegetable dishes for dinner each day. Spinach is my go-to vegetable because it can be made in just a few minutes.  I buy a container of organic baby spinach, sauté it on low heat in a little bit of olive oil with  garlic and salt until wilted.  It only takes 3 minutes.

As human beings we like variety.  It is easier and more enjoyable to eat vegetables when they are interesting.  Here I add radicchio to change it up a little.  The bitter radicchio contrasts nicely with the sweet spinach.  It doesn’t take any more time to make the dish either.

There are only a few ingredients; spinach, radicchio, garlic, salt, pepper and olive oil. There was some beautiful local spinach in the farmers market I just had to buy.  I added it to the container of pre-washed spinach.  The local food always has more flavor and nutrients but it is more work.  The pre-washed organic containers are fine to use.

Spinach and Radicchio Ingredients

Prepare the vegetables:  The spinach in the container does not need to be washed or cut.  Cut the radicchio into thin wedges and chop the garlic.  That’s it for the prep.

Radicchio

Heat a large sauté pan on medium low.  Use the biggest pan you have because the spinach takes up a lot of room until it wilts.  Add olive oil.  Add garlic and chopped radicchio. Sauté 2 minutes until the radicchio begins to wilt.  Add the spinach in batches, turning with tongs.

Turn the heat up a little and continue to add the rest of the spinach and salt.  Once the spinach starts wilting it releases water so you can turn up the heat without causing the oil to oxidize.  Keep turning with tongs until all the spinach is just wilted.  Don’t overcook it.  Sprinkle with fresh pepper, taste for salt and serve.

  • 1 tablespoon olive oil
  • 23 cloves garlic, coarsely chopped
  • 11 ounce container of washed baby spinach
  • 1 small head radicchio, cut into thin wedges*
  • 1/4 teaspoon Celtic sea salt
  • Fresh black pepper

Instructions

  1. Heat a large sauté pan on medium low. Add olive oil.
  2. Add garlic and radicchio.
  3. Sauté 2 minutes until the radicchio begins to wilt.
  4. Add the spinach in batches, turning with tongs. Turn the heat up a little and continue to add the rest of the spinach and salt.
  5. Keep turning with tongs until all the spinach is just wilted. Don’t overcook it.
  6. Sprinkle with fresh pepper and add more salt if desired.
  7. Serve.

Notes

You can use the same recipe to make sauteed spinach just leave out the radicchio.
