You’ll feel satisfied all morning long with this delicious anti-inflammatory breakfast porridge bursting with strawberry flavor. It’s thick & creamy full of healthy fats but no nuts or grains or sweeteners. Easy to make in only 10 minutes. AIP,  Gluten Free, Keto, Paleo, Vegan.

I’m always looking for delicious recipes to start my day. Porridge is so satisfying and this one is made with cauliflower instead of grains or nuts. It’s packed with nutrients, busting with flavor, full of fiber and there is no added sweetener. The sweetness comes from the strawberries. 

Coconut milk makes this porridge tastes so creamy without any nut milks or dairy! And it takes only 10 minutes to make!

It an egg free breakfast that will make you feel so good.

Ingredients for Creamy Strawberry Porridge

The ingredients are simple.

Strawberries – Since strawberries are in season I use fresh strawberries but at another time of year frozen would also work. They are rich in vitamin C and antioxidants. 

Cauliflower  -The base of the porridge is cauliflower to give it a grain like texture. I provides nutrients and fiber.

Green Apple is added for sweetness and fiber. The pectin in the skin is a type of fiber that acts as a prebiotic which feeds the good bacteria in your gut.

Coconut Milk  adds healthy fats and creaminess.  It’s a good source of medium-chain triglycerides (MCTs). Eating MCT increases energy and helps you feel satisfied, great for weight loss.

Gelatin or Arrowroot are use to thicken the porridge giving it a texture similar to oatmeal. If you’re vegan use arrowroot. I like gelatin for the additional protein. Both are good.

Dates are used to give the porridge additional sweetness. I like sweet food. You can leave them out and let the sweetness of the strawberries and apple be enough.  Dates are high in fiber and potassium, good for regulating blood pressure. 

Vanilla provides natural sweetness. It’s anti-inflammatory and helps relieve anxiety. 

Why Not Eat Oatmeal?

Oatmeal can be extremely beneficial for many people. It’s high in fiber and the bran it contains reduces cholesterol. But if you’re following a gluten free, paleo or anti-inflammatory diet protocol, oats may not be the best option since they are a grain.

Oats are technically gluten free but the protein molecules in oats may cause inflammation people with sensitive digestive systems. (Source). 

Oats and grains contain anti-nutrients like phytic acid and lectins. They can irritate your intestinal lining and they bind to minerals in your body which can depleting it of essential vitamins, minerals, and enzymes. 

That is why this recipe we use cauliflower instead of oats or grains while on a healing protocol. It provides all around wholesome goodness.

How To Make Creamy Strawberry Porridge

Cooking this porridge is similar to making oatmeal. 

Start by sautéing the cauliflower with the apple and half the strawberries to soften, 2-3 minutes*.

Add the coconut milk, remaining strawberries and dates. Simmer 1 minute.

Add the vanilla, gelatin or arrowroot and simmer 1 minute to thicken it bit. 

That’s it you’re done!

*Note: If you want your strawberries less cooked, add all of them with the coconut milk.

Optional Toppings

You can add as many toppings as you like or leave them out completely. Here are a few suggestions.

Shredded coconut gives it a little crunch.

Coconut yogurt adds to the creaminess.

Coconut butter or nut butter for additional protein

Fresh sliced strawberries or bananas. 

Cacao nibs

Walnuts or Pecans if you eat nuts

I love this Creamy Strawberry Porridge. I make up enough for 2 days, so I can grab and go in the morning. It holds really well in the refrigerator, just reheat.  

This recipe is is full of healthy fats, vitamins, nutrients, and fiber that will leave you feeling full, satisfied, and energized. It’s AIP, gluten-free, nut-free, grain-free and low carb.

Ingredients

Scale
  • 1 Tablespoon coconut oil
  • 2 cups cauliflower rice
  • 1/2 organic Granny Smith apple, shredded with skin
  • 1 cup strawberries cut in half or quarters if big
  • 2 teaspoon gelatin dissolved in 2 Tablespoon water
    or 2 teaspoons arrowroot dissolved in 2 Tablespoons water (vegan)
  • 1/2 cup full-fat coconut milk, canned
  • 12 Medjool dates, chopped
  • ½ teaspoon vanilla
  • pinch Celtic sea salt

Instructions

  1. Heat coconut oil in a medium sauté pan or saucepan on medium heat.
  2. Add cauliflower, apple and half the strawberries. Saute over medium heat until it begins to soften, about 3-4 minutes.
  3. Add in the coconut milk, remaining strawberries and dates and stir to combine Simmer 1 minute until it starts to lightly bubble on the edge.
  4. Add the salt, vanilla, dissolved gelatin or arrowroot. Stir and bring to a bubble again. Cook 1 minute more.
  5. Scoop the porridge into a bowl and serve with additional coconut milk and any other toppings you like!
