Easy Blueberry Compote (AIP, Paleo, Vegan)

This simple 2 ingredient Blueberry Compote is a fresh, sweet, saucy dessert that is light enough to keep you looking great in your bathing suit all summer long. Top it with coconut or Greek yogurt and it’s amazing!

Easy Blueberry Compote with pot

I live at the beach and during the summer I spend a lot of time in my bathing suit. I have to admit, I’m a little vain and want my stomach to be as flat as possible.

But, I love desserts,  so I’ve created an assortment of really light desserts to enjoy this time of year.

One of my favorites is this very simple Blueberry Compote. It has only 2 ingredients, blueberries and maple syrup and can be made in 10 minutes.

I love it because it’s fresh, saucy and sweet. As the berries cook they make an incredible sauce.  The blueberries soften just a little and are surrounded by the syrupy sauce.

I’m also enjoying my  Vegan Ice Cream In 3 Flavors which isn’t really ice cream at all. It’s a process that turns bananas into a dessert that tastes like ‘ice cream.’ There is no sweetener, no dairy, no nut milk, but it’s creamy and smooth.

 

 

What is Fruit Compote?

Compote is a simple fruit dessert made with pieces of fresh (or frozen) fruit and some sweetener, cooked briefly on the stove. The end result is deliciously textured fruit dessert in sweet sauce.

Blueberry Compote is my absolute favorite but you can make it with many different fruits. Here is a list of other compotes I’ve made:

  • Strawberries
  • Peaches
  • Strawberry and Rhubarb
  • Cherries
  • Raspberries (there will be seeds)
  • Blackberries (there will be seeds)

You can even mix the fruits, say half peaches half blueberries.  What ever fruit you use will be delicious.

Easy Blueberry Compote Alone

You can make compote ahead of time. Serve it cold or warm it up on the stove after dinner.

To keep it light, I serve it with yogurt (coconut or Greek) but it’s really good with whipped cream or as a topping for ice cream.

You can also use it as a sauce on pancakes, waffles, chia pudding or oatmeal.

Blueberries are a super food. They are the king of antioxidant foods and help reduce inflammation. They are beneficial for your bones because they contain iron, phosphorous, calcium, magnesium and zinc.

Blueberry Compote

Description

A fresh, saucy, sweet dessert made with only 2 ingredients.


Ingredients

Scale
  • 1 pint fresh blueberries
  • 2 tablespoons organic maple syrup
  • 4 tablespoons coconut yogurt or Greek yogurt

Instructions

  1. In a medium saucepan, combine blueberries and maple syrup.
  2. Cover and bring the mixture to a boil over medium-high heat, stirring occasionally. This will take about 3 minutes.
  3. Once boiling, reduce the heat to medium. Uncover, continue simmering, stirring often, until there is plenty of sauce and the blueberries are slightly cooked, about 5 minutes.
  4. Remove from the heat and taste for sweetness. I find it to be deliciously sweet just as it is but you can add more sweetener if you want.
  5. Let the compote cool for a few minutes before serving.
  6. Cover and refrigerate compote for up to 10 days.
