Cranberry Pear Sauce

DSC_0157 This year I am adding pears to my cranberry sauce to sweeten the tart cranberries. I like to use a little coconut sugar for additional sweetness. Coconut sugar is a low glycemic sweetener but you could use stevia if you prefer a no glycemic sweetener. Trader Joe’s stocks coconut sugar. I used ¼ cup, which leaves it a little tart, add more to suit your own tastes. This recipe can be made ahead of time and served warm or cold. I make it even when it isn’t Thanksgiving. I serve it with chicken or put it on top of coconut yogurt. 2 cups organic cranberries, (7.5 oz) ½ cup fresh squeezed orange juice 1 ripe, fresh pear, peeled and chopped into small pieces (about 1 cup) 4 Tb coconut sugar, Big Tree Farms can be found in most health food stores 1 tsp ginger grated or finely chopped (optional). Ginger goes nicely with cranberries and is great for digestion. Peel and chop the pears DSC_0154 Place all ingredients into a 2-quart saucepan and bring to a boil, reduce heat to medium low and simmer for about 15-20 minutes. Cranberry sauce1 After about 10minutes of cooking, use a large spoon to begin mashing the pears and cranberries. Continue to do this until it has become sauce-like and has thickened. It will thicken more once it cools. Cover and refrigerate until ready to serve. Heat on low to warm it up or serve it cold

Cranberry Pear Sauce

2 cups cranberries, (7.5 oz)
½ cup fresh squeezed orange juice
1 ripe, fresh pear, peeled and chopped into small pieces (about 1 cup)
4 Tb coconut sugar
1 tsp ginger grated or finely chopped (optional)

  • Place all ingredients into a 2-quart saucepan and bring to a boil, reduce heat to medium low and simmer for about 15-20 minutes.
  • After about 10minutes of cooking, use a large spoon to begin mashing the pears and cranberries.
  • Continue to do this until it has become sauce-like and has thickened.
  • It will thicken more once it cools.
  • Cover and refrigerate until ready to serve. Heat on low to warm it up or serve it cold
