Pumpkin Seed Cilantro Dressing is a creamy herby sauce that’s perfect for salads, steamed vegetables, fritters, wraps, and more!
- 1/2 cup hulled pumpkin seeds, soaked overnight*
- 1 small garlic clove, chopped
- 1/4 cup water
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon Celtic sea salt
- 1/2 cup lightly packed fresh cilantro, chopped
- 1/4 cup extra-virgin olive oil
- Put all ingredients in the blender. Blend until smooth.
- If the dressing is too thick, add more water to thin it out.
Dressing can be made without soaking pumpkin seeds.
