Pumpkin Seed Cilantro Dressing is a SUPER NUTRITIOUS creamy, zesty, high protein dressing that’s perfect for salads, fritters, burgers, wraps and more.  

The best thing about this dressing is it contains whole pumpkin seeds full of protein, fat and fiber to nourish your body.

Pumpkin seeds are a nutritional powerhouse. They contain vital minerals (especially zinc and magnesium), B vitamins and vitamin E.

These powerful seeds contain omega-3 and omega-6 fatty acids, antioxidants, and fiber. This combination has benefits for both the heart and liver.

Pumpkin seeds are truly a gift from nature. They taste great and are a good source of protein.

Their green color indicates their high amount of natural chlorophyll. Chlorophyll alkalizes the blood, which prevents inflammation that can occur from acids building up in our system.

The dressing is easy to make with simple ingredients;  fresh lemon juice, garlic, cumin and fresh cilantro. Put everything into a blender and blend until creamy.

Soaking the pumpkin seeds overnight makes them easier to digest but it’s not necessary.

Description

Pumpkin Seed Cilantro Dressing is a creamy herby sauce that’s perfect for salads, steamed vegetables, fritters, wraps, and more!


Ingredients

Scale
  • 1/2 cup hulled pumpkin seeds, soaked overnight*
  • 1 small garlic clove, chopped
  • 1/4 cup water
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon Celtic sea salt
  • 1/2 cup lightly packed fresh cilantro, chopped
  • 1/4 cup extra-virgin olive oil

Instructions

  • Put all ingredients in the blender. Blend until smooth.
  • If the dressing is too thick, add more water to thin it out.

Notes

Dressing can be made without soaking pumpkin seeds.

Nutrition information is for 1/4 cup.

    An this be stored in the fridge for a few days? Or will it brown?

    Thank you for the great tasting vegan recipe! I did omit the oil and added more water as I stay away from oils and eat whole foods. I liked this recipe so much that I also made it another time substituting the garlic with ginger and it was really good too! Saved my guests from garlic breath with using ginger yet kept the yummy spicy flavor. 😉
